Mellish, born in South Shields on 19 September 1997, began his senior career with Gateshead before joining Carlisle United in 2019. Initially a centre-back, he developed into a versatile defender/midfielder and became a key player for Carlisle, helping them win promotion to League One in 2022–23.

After moving to Wigan Athletic in January 2025, Mellish joined MK Dons on loan for the 2025–26 season. He became an important part of Paul Warne's promotion-winning squad, making 34 league appearances and scoring three goals as MK Dons finished second in League Two and returned to League One.
